Yes, very clearly, it was a Hamilton watch. bought it 15 years ago, after getting a bonus at work as a sous chef at l’Hotel de Crillon, Paris.
It wasn’t a particularly rare or expensive watch, but it was the first object that made me understand that a watch could carry memories as much as it tells time. Since then, I’ve always been fascinated by objects that become more meaningful the longer you live with them.
The Omega Speedmaster for its incredible history and timeless design.
The Cartier Tank, because it perfectly proves that simplicity never goes out of style.
And the Rolex Submariner, a true design icon that has transcended generations.

I travel constantly between Los Angeles, New York and Europe, and I wanted a watch that felt equally at home in every situation, elegant and built to accompany real life.
I love objects with a story.
Whether it’s furniture, books, watches or ceramics, vintage pieces carry a soul that new objects sometimes need years to develop. They remind us that true quality only becomes more beautiful with time!
Art, architecture, photography, contemporary design and, of course, food. I also love traveling because every destination becomes a source of inspiration.
My sketchbooks are filled with details collected from museums, landscapes, restaurants and everyday life.
My watch, my notebook, a pencil, my phone and a good pair of sunglasses.
I still prefer drawing ideas by hand before opening a computer.
One of my Omega watches has followed me through some of the most important moments of my career, from creating desserts for luxury maisons to opening new projects in Los Angeles. Every small scratch reminds me of a different city, a different encounter or a meaningful milestone.
That’s what I love about watches, they quietly collect my memories. I wear it everyday in the kitchen and it feels truly special to me.
Probably something exceptional from Omega’s history or an extraordinary independent watchmaker like Philippe Dufour.
Not because it’s rare, but because I admire the level of craftsmanship behind these creations. For me, the human hand is always the greatest luxury.

But I heard so many great things about it. About the food, the drinks, the creative concept, the art and the atmosphere!
I would spend the afternoon visiting artisan workshops and finish the day around an incredible dinner before flying back.
